To me, the weekend is prime time for take-out. One of my favorite things to eat, that I honestly probably overindulge in, is french fries. I love how every restaurant does fries differently. There really is so many ways to cook potatoes, the possibilities are pretty endless.
During the winter months, the extremely cold temps of Michigan make it difficult to want to go out. Once the workday is done and the weekend is here, I’m ready to curl up in my pajamas and watch a good movie. What’s the best thing to go with a cozy night in? For me, it’s a burger and fries, or in this case, potato wedges.
I once had potato wedges cooked on a pizza stone and from then on, I haven’t turned back. The wedges are perfectly crispy and it’s healthier than frying them. It also gives them a nice light brown crispness that can be difficult to get without frying. If you have a pizza stone, you will not be sorry trying these beauties. If you don’t, no worries, you can still create beautifully crispy wedges by lining your potatoes on a greased cooking rack.
These wedges pair perfectly with a spicy ketchup. I’ve included a quick and easy one below.
Ingredients
6-8 medium Yukon Gold Potatoes cut into wedges
1/4 cup Olive Oil
1 1/2 tsp garlic powder
1 tsp seasoned salt
1/2 tsp pepper
2tbs fresh chopped parsley
Spicy ketchup
1/2 cup of ketchup
1 1/2 tsp of your favorite hot sauce
1/4 tsp of garlic salt
Prep Time: 10 minutes | Cook Time: 45 minutes | Total Time: 55 minutes
- Cut your potatoes into 1 inch wedges
- Toss the potatoes, oil, seasoned salt, 1 1/2 tbs of parsley, pepper and garlic powder together in a bowl
- Line the pizza stone leaving 1/2 inch between each wedge
- Bake at 400 degrees for 45 minutes, flipping them halfway through
- Place the wedges in a bowl, toss with salt (if desired) and garnish with remaining parsley
- To spice up your dish, serve with spicy ketchup
